First, he cooks spinach and sausage, places them in the center of the frying pan, then adds the eggs to the pan.
From there, he just keeps literally rolling the eggs and ingredients vertically using the side of the pan to shape it. He makes it look so easy, though we bet it requires some serious skill to do this so smoothly.
According to Shimaneko, you can use this technique to many other dishes, too. Here’s another video of him making a rolling pasta-omelet using the same technique.

We thought he was using a special frying pan for this trick, but what did we know? It was only 1,500 yen, 15cm diameter Teflon frying-pan from Seiyu department store.
Also, he is using 3 large eggs for the omelet in this video, and a pinch of salt to taste.
