The beer is flavored with cherry blossoms and leaves while using fewer hops, which give the beer its bitterness and aroma. Sixty kilograms of edible double-flowered cherry trees, which are also used to make cherry blossom tea, are used for each brewing.

In addition, Sankt Gallen uses "Rakufu Mai" sake rice grown at the Izumihashi Sake Brewery in Ebina City, Kanagawa Prefecture. It adds a rich, sweet flavor unique to rice to the beer. Combined, the two ingredients impart a flavor to the beer which is reminiscent of sakuramochi.
