Specialising in squeezing the tastiest of lemons into fresh lemonade, Lemonade by Lemonica is a master of the phrase ‘When life gives you lemons, make lemonade’. Well now the brand is giving us more squeeze for our yen, and making sure to use every last bit of lemon goodness with their original lemon jam.
The jam makes use of the lemon peel that is normally discarded when squeezing lemonade, and has been developed by the brand as a small step towards helping to solve excess food wastage, which is one of the main goals being tackled by SDGs (Sustainable Development Goals) worldwide.
Lemonade by Lemonica is particular about ensuring the new product uses whole lemons. The jam is created using all parts of the lemon, including the rind and the mesocarp (white inner membrane) in addition to the juice and pulp.
Through trial and error, the brand has developed a jam that balances out acidity, bitterness and sweetness, whilst actively contributing to lowering unnecessary food waste. By using whole lemons the jam even clears the definition of what the Japan Lemonade Association considers as ‘true lemonade’.
No additional fragrances or colorings are used, as the original scent and colour comes straight from the lemons used in the production.
The flavour of the jam is described as ‘modest’ and is recommended by Lemonica to be paired with western style foods such as scones, tea or bread.
The jam is available to pick up now from gourmet STORE Kanazawa, which aims to be a supermarket that promotes the mission of the SDGs.
