You may have visited ice cream parlors and even some restaurants where the menu section for parfaits is incredibly long, even several pages long...
But no matter how thick the menu or how accommodating the establishment may be to "customizations," you probably won't have the opportunity to enjoy a parfait built to your specifications from the ground up.
At éGOISH, a pop-up dessert parlor opening at the Royal Pines Hotel Urawa in the outskirts of Tokyo less than a half hour from Tokyo Station, you can do just that. In fact, the level of customization you can achieve is such that a total of 39,690,000 combinations are possible.
In addition to the "Custom Order Parfait," in which you can choose from over 58 ingredients divided into 10 categories (including decorative elements, or in parfait parlance, the "crown") to create your own original parfait, there are three "Selected Parfaits" on the menu at éGOISH.
These include the "Patissier's Choice," in which the patissier combines powers of observation, inspiration, and culinary skill to create a parfait in your image, the "Chocolate Mania" for the unrepentant chocoholic, and "Strawberry Mania" which combines the beauty and flavor of strawberries to their fullest.
Each parfait costs 2,500 JPY + tax and service and can also be combined in a set with coffee (hot or iced) for 500 JPY, tea (hot or iced) for 500 JPY, or wine (white, red, or sparkling) for 800 JPY. Other alcoholic and non-alcoholic beverages can also be separately ordered from the menu.

Custom Order Parfait éGOISH
éGOISH is inspired by the English word "selfish" and its French equivalent "égoïste" to convey the idea of a special place where you're allowed to selfishly indulge in your parfait fantasies in a sophisticated setting while enjoying the beautiful vista afforded by the 19th-floor lounge of Royal Pines Hotel Urawa.
