A healthy and easy recipe for caramel ice cream using only three ingredients

Whether it's ice cream, gelato, sherbert, sorbet, frozen yogurt, ice cream cake, popsicles, ice cream sandwiches, or all of the above, for people who really love frozen desserts, it can be the middle of winter and they'll still be peering into their freezer, looking for something ice cold and delicious to eat.

But what happens when you've finished all the ice cream and there's nothing left? If it's late, you probably won't feel like making a trip to the store just for that. You could add it to your shopping list for the next day... Or you could make a frozen treat by yourself...

If you have tofu in your fridge but don't know what to do with it, or if you want a simple way to make a frozen treat with fewer calories than store-bought ice cream (or both), here's an easy recipe for Caramel Ice Cream using only three ingredients, courtesy of our sister site Grape:

Easy and Healthy Caramel Ice Cream

Here's what you'll need:


  • 150 g silken tofu
  • 150 ml milk
  • 4 tablespoons caramel syrup*

* Caramel syrup can easily be made with as little as sugar and water, or with sugar, milk, and butter, but if that sounds like too much trouble, you can replace caramel syrup with chocolate syrup or even honey in a pinch.

How to make

  • 1. Wrap the tofu in kitchen paper. Place in a heatproof container and heat in a microwave oven at 600 W for 3 minutes.
  • 2. Remove from the microwave and rewrap in new kitchen paper. The tofu will be very hot at this point, so be careful.
  • 3. Let the tofu sit for about 10 minutes to drain.
  • 4. Blend the drained tofu in a food processor to a smooth consistency.
  • 5. Put the tofu, milk, and caramel syrup into a freezer bag and mix thoroughly.
  • 6. Chill in the freezer for about 3 hours.
  • 7. Take it out, lightly squeeze the freezer bag and place the contents in a bowl.

Voilà! You have caramel ice cream.

The key is to thoroughly mix the tofu in a food processor to achieve a smooth texture. This will make your ice cream more enjoyable.
