Moriyama Napoli Kanazawa Pizza Crafts is a pizza factory based in Moriyama, near the quaint Higashichaya Old Town district of Kanazawa, selling authentic Napoli-style pizzas, freshly made and sold exclusively online for delivery throughout Japan.
On October 1st, 2021, they began selling a new lineup of gluten-free "SDGs pizzas" made from okara, a food by-product from tofu and soy drink production, using a dough jointly developed with Okara Technologies Corporation, a startup company funded through the initiative of famous Japanese entrepreneur Takafumi Horie.

As a small step toward solving the problem of food loss in the global effort to achieve Sustainable Development Goals, Moriyama Napoli has jointly developed an okara pizza with Okara Technologies Inc. It's a familiar food in Japan and other East Asian countries. However, in modern times, the demand for okara is much lower than the amount produced in the manufacture of tofu and soy milk. Because of its high water content, it deteriorates quickly and is difficult to use raw. While some of it is used as livestock feed, much of it ends up being discarded.
Moriyama Napoli has succeeded in baking pizza dough using this raw okara. They've carefully selected toppings that go well with the new "fluffy and chunky" texture of their okara dough, creating four delicious new pizzas: OKARA Truffle and Pecorino, OKARA Rainbow Cheese Pizza, OKARA Soy Meat and Salsa, and OKARA Margherita.

Okara pizza dough has numerous health advantages over regular wheat dough. Not only is it low in calories but it contains three times the amount of protein and about one-third of the carbohydrates. It's recommended for people who are on a low-carb diet, people who'd like to reduce their calorie intake, and health-conscious people in general. In addition, since okara swells up in the presence of water, it's perfect for people who want to lose weight by feeling full. In addition, it contains a lot of insoluble fiber, which promotes bowel movement and helps regulate the digestive system. Finally, okara is rich in minerals and lecithin, which improves memory.

Spicy salsa sauce and tart tomato sauce blend harmoniously, while the soybean meat makes it low in fat. It's a tasty and healthy option.
