In the past six months since it opened in June 2022, Chillmatic has left its mark on Tokyo's gourmet burger scene.

A new "burger bistro" in Shibuya, a lively neighborhood famous for its energetic street atmosphere and trendy fashion, Chillmatic has gained an excellent reputation for its carefully crafted burgers and particularly for its outstanding homemade pastrami. The restaurant was established through the collaboration of 米澤文雄 Fumio Yonezawa, a Michelin-rated chef with experience in both New York and Tokyo, and renowned chef 塩田大治 Daiji Shioda, who livens up Chillmatic with his expertise in French cuisine and his outgoing personality, accented by an impressively bushy beard.

The Concept

The concept behind Chillmatic is to provide a "chill" atmosphere with the best in food, drinks, service, and space, with a focus on street culture. The name "Chillmatic" is a play on the words "chill" and "illmatic" - meaning the best and most enjoyable. The space is designed with a street culture aesthetic, fitting in well with the MUSTARD™ HOTEL Shibuya, where the bistro is located, which also has a focus on street culture and events.

The Menu

Chillmatic offers a variety of delicious and unique burger options, with the signature dish being the 90-day aged beef and homemade pastrami burger.

The pastrami is prepared by marinating beef brisket for four days in salt and then heating it until tender, and then smoking it for an additional six days before it is served. The pastrami is thick and has a crispy texture which compliments the juicy patty made with coarsely hashed 90-day-aged premium beef with a subtly sweet and nutty flavor. This amazing burger sets you back 1,800 JPY.

A full dinner menu, including things like barbecue ribs and other tasty dishes, is also available.

Although it may no longer be available at the time of writing, ポークビンダルー食べる副大統領 Pork Vindaloo Taberu Fukudaitoryo [Google Map], a highly-rated restaurant specializing in pork vindaloo, added Chillmatic pastrami as a topping in November 2022.
