Japanese food and drink have a reputation for its salubrious qualities. The traditional Japanese diet - rich in vegetables and grains and low in animal products - contains few sugars and saturated fats, and is high in antioxidants. Japanese staples, such as antioxidant rich matcha tea, or natto, a pungent, nutrient explosion of fermented soybeans, are now consumed globally as part of health trends.

In recent years, kombucha, a fermented black or green tea, has been experiencing a boom and may be the Japanese product to make it big as a health food. A strong indicator of this is that the probiotic drink is becoming widely available in Japanese convenience stores. Even stronger an indicator is that craft versions of kombucha are starting to emerge into the market.

KOMBUCHA_SHIP, a sparkling kombucha drink produced by Oizumi Factory, is one example to watch. Oizumi Factory is opening a pop-up store in fashion capital of Tokyo, Omotesando, on September 9th as a sure sign that the product is going mainstream. Read on to find out more about the limited-time store and the delicious, healthy drinks you should enjoy while you have the chance.

Oizumi Factory: The zero-waste, health drink stand

Oizumi Factory produces and sells kombucha. With stores already open in Kawaguchi city and Tokyo’s Nishi-Azabu neighborhood, the Omotesando store marks their third venture.

The pop-up store will sell 4 types of their KOMBUCHA_SHIP brand sparkling kombucha tea, as well as a cold-pressed juice cleanse set. Oizumi Factory want customers to enjoy the health benefits of komubucha, which being fermented, contains good bacteria and yeast to help regulate intestinal function and also promote healthy skin.

In addition to being good for your gut, Oizumi Factory also aims to be good for the environment as a zero-waste store. By producing only recyclable waste through their business operations, Oizumi Factory hopes to raise its customer’s awareness about the environment. Some of their initiatives include serving drinks in reusable cups that customers must return to the store, as well as selling drinks in growlers, large bottles that customers can fill with drinks and return to the store to top up.

Oizumi Beverages

Each drink is priced at ¥700.

KOMBUCHA_SHIP is made with only the best organically grown tea leaves from Uji, a famous tea producing area near Kyoto. The original drink is carbonated, with fruity aromas and a satisfyingly acidic flavor of pear and fermented white grape. The drink has detoxing properties that promote longevity and healthy skin.

The yuzu flavored kombucha drink uses yuzu from Japan’s Tokushima prefecture. The sparkling drink is a clear gold color like champagne. As you bring the glass to your nose your senses are refreshed by the scent of yuzu. The drink is rich in limonene which is a component of Yuzu’s outer skin. The essential oil helps to strengthen immunity and promotes good sleep.

Shiso (Perilla)

The drink, using original KOMBUCHA_SHIP as a base, incorporates red perilla from Miyazaki prefecture. This kombucha is a pale red color like rose wine, with a gentle mouthfeel and a gorgeous perfume scent that fills your mouth with every sip. Rosmarin, a polyphenol contained in red perilla, is a strong antioxidant that is said to promote the detoxification function of the liver. This is a perfect craft kombucha for when you’ve drunk too much craft beer.

This kombucha contains powdered mulberry leaves which are rich in nutrients. The drink is a pale color and tastes like a light green tea, with natural notes that linger with every sip. Mulberry is currently attracting attention as a superfood rich in DNJ(TM), a compound that suppresses the absorption of sugar in the intestine, which can help to regulate blood pressure and prevent diabetes.

Cold-Pressed Juice Cleanse Set

Priced at ¥6,500 per set, the juice cleanse contains assorted juices, nut milks and kombucha original. The set is designed to cleanse your digestive organs with nutrient-rich drinks that revitalize your body with energy and nutrients while giving your digestive tract a break from processing solids.
