Sparkling fermented tea, KOMBUCHA_SHIP, is coming to grace the menu at Tokyo Midtown’s ukafe from Wednesday April 1, 2020.
KOMBUCHA_SHIP is currently being sold in about 60 places nationwide across Japan, which are mainly restaurants and hotels. The product contains nutrients such as lactic acid bacteria, polyphenols and enzymes.
The fermented drink is believed to have multiple health benefits, including being anti aging, aiding arthritis and helpful for bodily digestion.
The health drink is consistent with ukafe’s concept of “healthy eating, healthy body”, and was chosen as a new addition to the cafe’s menu offering healthy and organic foods. The cafe shares its space with a health and beauty salon, so in addition to enjoying KOMBUCHA_SHIP in ukafe, it is also possible to reap the health benefits of the drink alongside a beauty treatment.
About Kombucha and KOMBUCHA_SHIP
Kombucha is a fermented drink made by adding sugar (KOMBUCHA_SHIP uses unrefined sugar cane), acetic acid bacteria and yeast to tea, and fermenting it to produce a fruity acidity and a refreshing micro carbonation texture.
The name is assumed to be a misapplied loanword from Japanese, Kombucha 昆布茶, which literally means Kelp tea (Kombu, 昆布 = Kelp, Cha, 茶 = Tea). Kelp tea was popular in Japan during the 1970s and is a completely different drink from today’s Kombucha and KOMBUCHA_SHIP.
Because the drink’s base is tea, the calories in Kombucha are lower than in juices, and instead, nutrients such as lactic acid bacteria, enzymes, and polyphenols are highly concentrated. Various positive effects of the enzymes in the drink that can be expected include the improvement of the immune system, improvement in appearance of dry skin, and an increased metabolism.
KOMBUCHA_SHIP is an original brand belonging to Oizumi Factory Co. Ltd.
The brand uses carefully selected tea leaves from Nagata Tea Garden, a tea farm based in the famous city of Uji, which uses organic and traditional cultivation methods.
The drink features a fruity pearlike acidity, a strong fermentation “umami” flavour and light carbonation that brings the taste buds to life. Using live bacteria from yeast, KOMUCHA_SHIP ferments on its own without the use of any heating methods or appliances. Without the need for extreme heating, KOMUCHA_SHIP prides itself in being one of Japan’s most environmentally friendly beverages.
KOMBUCHA_SHIP will be available on the menu at ukafe from 1 April, 2020.
