Lemon cheesecake mochi ice cream is a delightful twist on a beloved classic

Yukimi Daifuku is a very popular brand of mochi ice cream in Japan. In its standard flavor, it consists of vanilla ice cream wrapped inside a thin layer of chewy mochi rice cake.
