Summer is here, and it’s super hot and humid in Japan. The traditional way to cool down in Japan is a bowl of Kakigori (shaved ice dessert). Realistically, just a small pile of shaved ice isn’t going to help much, it has to be humongous like this !

The Japanese famous Kakigori store Atelier Sekka has extremely high demands for their ingredients. Needless to say to its huge quantity, their shaved ice is actually shaved from Mt. Fuji. But before shaving, they must wait 3 weeks for the water to be frozen, then remove it slightly each time to keep the right softness to serve.
