Maitake mushrooms (Grifola frondosa), otherwise known as hen-of-the-woods, ram's head, or sheep's head mushrooms, are harvested in the deep mountains every year from September to October.
Since they can also be artificially cultivated in large numbers, maitake mushrooms are sold in supermarkets and other stores throughout the year, but they taste even better when they are in season.
JA Zen-Noh's Maitake Mushroom Mixed Rice Recipe
Recently, the Twitter account of 全農広報部, the PR Department of Zen-Noh, Japan's National Federation of Agricultural Co-operative Associations (@zennoh_food) revealed a delicious way to eat maitake mushrooms: turn it into delicious mushroom mixed rice!
All you need is a rice cooker and a few additional ingredients.
First, wash rice and soak it in the rice cooker for 30 minutes. After 30 minutes, dump the water and stir in 1 tablespoon each of soy sauce and sake for each cup of rice, along with a bit of powdered dashi broth (or two to three tablespoons of liquid dashi), and add water until the liquids reach the line indicated in the rice cooker for the amount of rice you're cooking.

Then take a suitable amount of maitake mushroom, separate the branches, put them into the rice cooker, cook the rice, and you're done!

According to Zen-Noh, the aroma of maitake mushrooms that wafts through the air while the rice is cooking is sure to make you drool.
As for the finished product, it "won't betray your expectations."
