According to executive Pastry Chef Kazuo Suzuki who masterminded the Westin Tokyo's first ever matcha-exclusive dessert buffet, "the charm of matcha lies in its fragrance and bitterness." Therefore, in order to create a medley of matcha desserts that delight the palate without becoming monotonous, for each dessert, he focused on achieving just the right balance between the matcha and the other ingredients.
For example, their matcha fondant combining thyme and matcha for a fragrance that evokes the fresh greenery of early summer; their strawberry and raspberry trifle blending together the refreshing tartness of red berries with the soft bitterness of matcha; or their matcha tiramisu and their matcha Mont Blanc. Each of these desserts convey the sense of wabi sabi in their aesthetic appeal and deep flavor.
