The Japanese store Hibika (ひびか hibika) is a Japanese-Western confectionery shop specialized in sweet treats and desserts.
Hibika takes an interesting approach when making their sweets, mainly based on a fusion between Japanese and Western confectionery.
The shop focuses a lot on the four seasons in Japan and combines it with western sweets, resulting in unique, slightly Japanized western desserts.
They also use seasonal ingredients and, this year, they came up with a new summer collection that looks and tastes fantastic.
Starting from June, several sweet and refreshing treats with a concept that focuses on the image of summer will be on sale.
Here are some of the desserts you can either try out or offer as a gift to someone dear to you:
Drops of Peach Fruit (桃果のしずく momoka no shizuku)
This dessert is a jelly that uses a mix of fresh water from one of the World’s Natural Heritage Sites in Japan, the Shirakawa Mountains, and delicious white peaches from the Yamagata Prefecture. It has a refreshing sweet taste and a wonderful fragrance given by the peaches.

Summer assortment mini tin (夏の ふきよせ ミニ缶 Natsu no fukiyose mini kan)
The metal cookie tin box contains an assortment of colorful sweet treats, including vanilla cookies with summer motifs such as seashells, but also a sweet-sour ramune meringue perfect for this season.
Price: 1,944 yen (tax included)
Summer cookie "Polvorón" (夏のクッキー“ ポルボロン” natsu no kukkī “poruboron”)
Polvorón is a soft shortbread that has its origins in Spain. Due to its crumbly texture, the sweets will melt into your mouth, filling them with the different summerish flavors used as ingredients. The store used rich flavors such as corn, almonds, citron, which are a good match for this season.
