A completely new type of chocolate has apparently been discovered. In addition to milk, dark and white chocolate, ruby chocolate is making its debut this month.

Japanese Kit Kats have given us plenty of innovative flavours and products over the years such as Kit Kat Sushi pictured below and even Birthstone Kit Kats, but with a whole new type of chocolate, one could say they’ve really raised the bar (ha).

This is the first new natural colour of chocolate in over 80 years, since white chocolate was introduced by Nestlé. No extra flavours or artificial colouring is added to create the pink colour. The taste is described as a ‘fruity flavour reminiscent of berries’ and it has a ‘mild sweetness’.

It took more than a decade for the world’s largest cocoa processing company, Barry Callebaut, to understand how to process this fourth chocolate type from ruby cacao beans. Nestlé struck a deal with the Zurich-based company, giving them exclusive rights for six months to the brand new product. They decided the world's first taste of this new product should be in Kit Kat form.
The product is called Sublime Ruby and will be available in Kit Kat Chocolatory stores in Japan and South Korea for 400 yen, from 19th January to 25th. Online sales are limited to 5000 bars.

If you miss out don’t fret, the bar will once again be available within Valentine’s Day sets. The boxed selections will be sold at the Chocolatory stores, online, and in pop-up stores across the country. The two packs, 5 and 7 bars respectively, contain the other varieties from the 'Sublime' range.

The creators hope that ruby chocolate will be as big of a success as white chocolate was when it was first introduced, so it surely won't be long before the the elusive fourth chocolate is seen all over the world. Chocoholics will also be excited about the ruby creations we're bound to see when Nestlé's six months is up and chocolatiers have carte blanche. Or should that be carte rose?
